Frosty No Bake Coffee Pie

I love “no bake” pie. When that no bake pie comes with both chocolate and caffeine, there’s nothing better! In 2009 this pie was one of the finalists in the Great American Pie Show. After you taste it you will wonder how it didn’t take first prize . Make this pie in the morning and it will be ready to serve at dinner.

This pie is made with a chocolate crust. You can of course make your own, or you can buy a pre-made chocolate crust.
When I make my own crust, I use about 18 Oreo cookies and 1 Tablespoon of melted butter. Crush the cookies and mix in the melted butter. Pat the crust in a 9 inch pie pan. I use my hands to flatten it but you can use a fork. Then, drizzle the crust with hot fudge sauce. Yum, just the crust alone would be delicious.

Frosty Coffee Pie

1/4 cup hot fudge sundae topping, warmed
1 9 inch chocolate crust
3 cups softened coffee ice cream
1/2 cup strongly brewed coffee
1 5.9 oz. Package chocolate pudding (instant)
1/4 cup milk
1 cup marshmallow creme
1 3/4 cups whipped topping
1/4 cup mini semi-sweet chocolate chips

Filling

To make the pie filling you will beat the ice cream, pudding mix, milk and coffee until well blended. To make the mixing easier I soften the ice cream in the refrigerator for approximately 30 minutes before mixing. If you don’t have 30 minutes, you can use the microwave for a few seconds. If you can’t find coffee ice cream you can use chocolate. Next, pour the filling mixture into the crust.
Put the pie in the freezer for about 30 minutes. This will make it much easier to spread the topping.

Topping

Mix the whipped topping and marshmallow crème. Spread the mixture over the chocolate filling.
Sprinkle with miniature chocolate chips. If you don’t have mini chocolate chips you don’t need to go out and buy any. You will only need a handful, so you can either shave twirls of semi sweet chocolate to put on top, or just use the regular size chocolate chips.
Freeze the pie until firm. I usually freeze for several hours and then cover the pie with cling wrap.
